How to use Tamarind

Tasting far better than commercially prepared pulp, it just takes a touch more time to produce a superior flavour using black tamarind. Or if short of time, choose a tamarind pulp that simply contains tamarind and water and once opened keep in fridge. When purchasing, check the ingredient label and buy the brand without preservative. As I'm typing this (15.09.21) tamarind with preservative is sold in a red container in Perth and the tamarind without is in a blue container!
