One-minute Mayonnaise

One of the most used recipes in my kitchen! This one-minute mayonnaise means you and your family have a healthier alternative than commercially produced mayo to keep in the fridge. Tastes so good too. Adjust with more vinegar and salt if you like a fuller flavour. To make Aioli, simply bruise a clove of garlic with a knife that has a wide blade, peel and push the clove into the mayonnaise. Leave to infuse from 2 hours to 7 days and remove when serving.
