Roasting Tomatoes

One of the best standbys to have in your fridge. Roasted tomatoes take 30 to 40 minutes in a moderate oven and can be used in so many ways. Use Roma tomatoes when in season as they have less seeds and more flesh. Roast on a lower heat for longer if you have a bit more time, try 90 minutes at 160C. Delicious.
