Ancho Mole Grilled Chicken

Marinate chicken thighs in ancho chilli for warmth and fruit, tamarind for a sour twist and a touch of brown sugar for sweetness. Grill for that perfect smoky flavour and simmer in the marinade to finish cooking. Reduce the ancho mole and spoon over the tender chicken. Serve with Red Rice and Guacamole 'Slaw for the full Mexican experience!
