Watermelon and Feta Salad

I call this the Christmas Fairy Light Salad as the balls of red watermelon look like lights on a Christmas tree.

This recipe was shared with customers in a cooking class many years ago. It was designed by one of the teachers working with us whose interest was in wholefoods and healthy eating. At the time, I must admit I was a touch unsure of this as I wasn't a kale convert until I tasted it. And it was wow! I now make it often over summer.
